Ok so I think I have a color theme that I want for our bedroom!!

NFL Draft Behind US!

With the NFL Draft behind us, we now go with out football for 4 months according to DH...

Here was my menu- My personal reviews of the items

Marinated Beef Satays with Sweet Chile Dipping Sauce

1/2 pound flank steak, sliced against the grain
1/4 cup canola oil
2 teaspoons sesame oil
1/4 cup thin soy sauce
1/4 cup Shaoxing wine or red wine
1 tablespoons minced garlic
1/4 cup chopped scallions
1/4 tablespoon coarsely ground black pepper
2 tablespoons brown sugar
12 wooden skewers soaked in water
2 cups soaked mung bean or rice vermicelli
1 bunch Thai basil leaves
12 red lettuce leaves
Sweet Chile Dipping Sauce, recipe follows
Marinate steak in a bowl with oils, soy sauce, wine, garlic, scallions, black pepper, and sugar. Let stand at least 4 hours refrigerated.
On a hot oiled grill, cook satays until medium rare.
On a large plate, arrange red lettuce, noodles, and basil. Wrap beef, noodles, and basil with the lettuce, in amounts desired. Dip into the Sweet Chile Dipping Sauce.
Suggested drink: Singha Beer
Sweet Chile Dipping Sauce:
1 tablespoon canola oil
1 red bell pepper, minced
2 shallots, minced
1 tablespoon minced ginger
3 Thai bird chiles, minced
1 tablespoon minced lemongrass
1 lime, juiced
2 tablespoons honey
1 teaspoon salt
In a hot saute pan, coat with oil and cook pepper, shallots, ginger, chiles, and lemongrass until soft. Deglaze with juice. Add honey and salt and check for seasoning. Serve at room temperature.

*Overall great taste.. But shopping for it was a pain, Wegmans didn't carry a lot of the items so I had to compromised on a few things!

Granola Peanut Butter Balls

2 tablespoons honey
4 tablespoons peanut butter
2 cups granola
2 to 4 tablespoons milk, or as needed
In a large bowl, mix together the honey and peanut butter. Using a spatula, stir in the granola. Add enough milk to just moisten--you want it to stick together. Form into balls. Chill until ready to serve.

Easy to make- I could only eat 2 with Milk..

I also made Chili, Deviled Eggs, Nachos & Fruit salad...

The chili was a slight miss until Jason helped...It takes a lot more spices than you think, not a bad outcome for my first time cooking it in the crock pot!

Well, a welcome to the weekend! We need a whole new AC unit outside and coils inside... Nice chunk of change!!!

House .. time to get down to the nitty and the gritty

I am all excited about all the stuff I found on Martha Stewart . com .. cleaning products that are natural.

Now that we are going to re-paint and carpet the house, thanks to Jason's Dad (carpet & paint guy) I feel like we can get the house together..

I have kept design ideas aroung for a while, but havent made any decisions, but paint color can really influence a feeling in a house..
I want that calm, clean, tranquil welcoming feeling when you come in, something that relaxes us after a long day at work.

I found a few new websites for inspiration: (reminds me I want to plant some this year)

I do want to take some of the pictures that I have taken and get them printed and framed.. guess I should make a list!

Anyways.. there are so many things to do to the house that its hard to know where to start!

Another fun and busy weekend!

Back to work ..

It rained most of yesterday, last night and is continuing today.. Makes me wish we had a fireplace to curl up in front of.

Saturday, DH took total charge of the back &; front yards...&  I took the inside before DH's Mom, Bonnie & BF came over.... Luckily it was a beautiful day and we relaxed a little outside while we grilled.

Saturday night DH set up our new DVD player (thanks to his parents - one of our wedding gifts) Seeing Casino Royal in DH is pretty cool!

Sunday we relaxed a little before heading out to dinner with mom & dad for their 20th anniversary dinner.. Poor Sister has a terrible ear infection, but as always she is a trooper and sucked it up for a steak dinner ;-)

Our First Posting 04/18/08

Two weeks ago was the wedding! Wow how time flys!!!

We are getting back into our routine. Still unwrapping gifts and trying to figure out where to put them, at this point its the dining room table..

Its time for spring cleaning, I found great information on Martha Stewarts website . Cant wait to get started!

Today is Jason's moms Birthday - Christine S.

My Parents anniversary is 4/24 so its an exciting month!
